Paleo Banana Bread/Muffins

Paleo Banana Muffins

Paleo banana muffins. Very good.
Ingredients
  • 4 bananas, (2½ cups mashed or 575 grams)(they can be yellow bananas)
  • 4 eggs
  • ½ cup almond butter (140 grams)(or coconut, sunflower seed, macadamia, etc)
  • 4 tablespoons grass-fed butter, melted (can substitute coconut oil)
  • ½ cup coconut flour (75 grams)(or almond flour, macadamia nut meal, etc)
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • pinch of sea salt
Instructions
  1. Preheat your oven to 350 degrees fahrenheit
  2. Combine your bananas, eggs, and nut butter, and grass-fed butter in a blendtec, blender, food processor, or mixing bowl and mix well (if using a mixing bowl you need a good hand-mixer)
  3. Once all of your ingredients are blended, add in your coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt and mix well
  4. Grease a 9×5 glass (see notes) loaf pan with a fat of your choice (I used grass-fed butter). If you use a metal pan it will probably bake in 35-40 minutes so start checking at 35 to ensure the middle stays moist
  5. Pour in your batter and spread it evenly throughout
  6. Place in your preheated oven and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean
  7. Remove from oven and flip your bread out onto a cooling rack
  8. Slice and serve
  9. * I make these as muffins, cook time is about 25 minutes.

 

Bear Bread

Bear Bread

Ingredients
  • ½ c milk
  • 3 T sugar
  • 2 T salt
  • 3 T margarine
  • 1 pk yeast
  • water
  • 3 c unsifted flour
Instructions
  1. Scald milk
  2. Stir in sugar, salt, and margarine, cool to lukewarm.
  3. Dissolve yeast in ½ c warm water. Add milk mixture and flour, beat until smooth.
  4. Stir in more flour (3.5-4 c) to make a stiff dough.
  5. Onto floured board, knead 8-10 minutes.
  6. Place dough in greased bowl and grease top.
  7. Cover, let rise until doubled (1 hr).
  8. Punch down.
  9. Divide into four equal pieces.
  10. Cut one of the pieces in half.
  11. Cut one f the pieces into 14 pieces.
  12. Shape into balls.
  13. Place large balls on greased baking sheets for bodies.
  14. Place medium balls above for heads, flatten slightly and pinch seams.
  15. Attach small balls for paws, nose, and ears.
  16. Cover and let rise until doubled, about an hour.
  17. Make indentations in ears, place raisins for eyes and belly button.
  18. Mix 1 egg and 1 T water, brush on bears.
  19. Bake at 400 degrees for 25-30 minues and allow to cool.
