Paleo Chili

Paleo Chili

A non-traditional chili filled with an abundance of flavor and textures.
Ingredients
  • 2 pounds of ground beef, browned
  • 2 large onions, diced
  • 2 large sweet potatoes, diced
  • Whatever fresh sweet and hot peppers are available
  • Chopped garlic or garlic powder
  • Chili powder
  • Salt and pepper
  • Ground red pepper
Instructions
  1. Brown ground beef, add onions and cook until mostly done.
  2. Add sweet potatoes, cook until mostly done.
  3. Try not to stir too often to keep the potatoes intact.
  4. Add chopped peppers or other veggies, add seasoning.
  5. Cook on medium-low until desired doneness.

 

Wanna-Be PF Chang's Lettuce Wraps

Pouring Sauce:
1/4 c sugar
1/2 c warm water
2 T soy sauce
2 T rice wine vinegar
2 T ketchup
1 T lemon juice
1/8 t sesame oil
1 t hot water
1 T dijon mustard
2 cloves garlic, minced

Chicken Stir-Fry:
2 T olive oil
2 T sesame oil
2 boneless skinless chicken breasts, cubed to 1/2″
8 oz water chestnuts, minced
1/2 c mushrooms, minced
1/2 onion, minced
3 cloves garlic, minced
5 large lettuce leaves or nappa cabbage

Stir fry sauce:
2 T soy sauce
2 T brown sugar
1/2 t rice wine vinegar

Begin by making the pouring sauce. In a large bowl, dissolve sugar in 1/2 c warm water, then add soy sauce, vinegar, ketchup, lemon juice, and sesame oil. Mix well and throw in fridge until you’re ready to eat.

Combine 1 teaspoon hot water with dijon mustard and garlic and set this aside in small bowl.

Combine oils and add to wok or large frying pan. Heat oil over high heat until it glistens, about 1 minute. Add chicken and saute until cooked through, then remove from pan and cool. Keep oil in pan, keeping hot over low flame.

Prepare the stir fry sauce by mixing the soy sauce, brown sugar, and vinegar in small bowl.

Take pan that you cooked the chicken in and turn it up to medium high heat. . Add another tablespoon of olive oil to the pan, wait 1 minute. Add chicken, garlic, onions, water chestnuts, mushrooms and the stir fry sauce. Stir fry everything until the mushrooms have cooked (about 4 minutes) and remove to a serving dish.

Add mustard/glarlic mixture to the pouring sauce, 1/2 teaspoon at a time to taste.

Serve stir fry with lettuce leaf wraps and top with pouring sauce.

You can do the same with ground beef instead of chicken

Brown meat
Fill pan to 1/2 full of water
Add salt and pepper
Worcestershire sauce
ketchup
maggie’s sauce
cook potatoes in pan until tender, then add veggies.
Add corn starch (2-3 T mixed with cold water)

Rodino's Italian Beef

Place shoulder roast in deep roaster.

Salt and pepper both sides. Add lots of chunked onions, hot banana peppers (not juice), 5-6 bay leaves, then cover with water.

Bake at 325 until tender. Shred on cookie sheet while still warm. Place in container with juice on it.

Taco Casserole

Fry:
2# hamburger
2 pk taco seasoning
1 chopped onion

Add:
2-15 oz cans tomato sauce
1/2 c water
1 can refried beans

Layer mixture with 2 cups of taco chips and 2 cups cheddar cheese. Bake at 350 for 30 minutes.

Grandma Farrer's Meatballs

Mix together:
1 t garlic powder
3# hamburger
1 c milk
2 c oatmeal
2 eggs
1 t salt
1/2 t pepper
1/2 t chili powder
1 t Worcestershire
1 t onion powder

Sauce:
2 c brown sugar
2 c ketchup
1 t Worcestershire
2 t mustard

Arrange meatballs in baking pan. Drizzle with part of the sauce. Bake 1 hour at 350. Put in slow cooker with remaining sauce.

Makes 65-70 balls.

Bev's Broccoli and Rice Casserole

1 box frozen chopped broccoli (or 1 head, chopped)
1 can cream of mushroom soup
1 cup cheese, cut up (or 1 small box Velveeta)
1 c cooked rice
1 soup can water

Cook rice, add water and soup. Add cheese and broccoli. Simmer on stove top until cheese and broccoli are mixed. bake about 30 minutes in 350 degree oven or until brown on top.

Beef and Noodles

Brown meat, then cook until tender in 1/2 pan of water with salt, pepper, parsley flakes, onion, and either Worcestershire sauce or two beef cubes. Add noodles to broth and cook to desired tenderness.

Beef Noodle Soup

1 beef shank
fresh parsley
salt and pepper
1 onion
celery centers
tube noodles

Slit shank and brown before cooking.
In 2/3 pan of water, cool beef shank, parsley, celery, and salt and pepper. Cook until meat is tender. Cut up meat and remove bone.
Add meat back to broth. Boil noodles in broth.

Grandma Rodino's Pepper Steak

Sirloin tip sliced paper thin

Marinade:
1/4 c oil
clove garlic
salt/pepper
1 tsp ground ginger

Brown meat and marinade lightly.

Add:
3 large green peppers
2 large onions
1/4 c soy sauce
salt/pepper
beef bouillon
several quarts of water (until covered)
pea pods

simmer everything together until desired tenderness. Thicken with corn starch.
