Paleo Chocolate Chip Cookies

Paleo Chocolate Chip Cookies

Crispy on the outside, soft and chewy on the inside
Ingredients
  • 1 c. almond flour
  • ¼ t. sea salt
  • ⅛ t. baking soda
  • ¼ t. cinnamon (optional)
  • 3 T. coconut oil or butter (melted)
  • 2 T. honey
  • 1½ t. vanilla
  • water
  • chopped dark chocolate
Instructions
  1. Preheat the oven to 350 degrees
  2. Mix the almond flour, salt, baking soda, and cinnamon.
  3. Stir in the coconut oil, honey, and vanilla.
  4. Add in 1-3 tablespoons water as needed to bring everything together.
  5. Stir in the chocolate last.
  6. Bake for 10-11 minutes on a well oiled or parchment paper-lined cookie sheet (the edges should be golden).
  7. Let them sit on the pan for 5-10 minutes (they firm up during this time, so this is an important step!).

 

Paleo Chicken/Turkey Basil meatballs

Paleo Chicken/Turkey Basil meatballs

These are delicious and filling.
Ingredients
  • Half of a head of cauliflour, riced
  • coconut oil
  • 1 pound of ground chicken
  • 1 pound of ground turkey
  • Fresh or dried basil, finely chopped
  • dried oregano
  • salt and pepper
  • 1 egg (I don't remember how many I used!)
  • Sauce:
  • 2 Tomatoes
  • Balsamic vinegar
  • Olive oil
Instructions
  1. Brown cauliflour rice in a pan with coconut oil, allow to cook a bit.
  2. In a large bowl, mix meat, eggs, seasonings, and cauliflower
  3. Form into balls on a cookie sheet.
  4. In the Ninja, puree the ingredients for the sauce and pour over meatballs evenly.
  5. Cook at 350 until done.

Paleo Apple-Banana Cobbler

This needs some work yet, but it very delicious
Ingredients
  • Coconut oil
  • 1 Apple, chopped
  • 1 Plantain, sliced
  • Cinnamon
  • Vanilla
  • Coconut flour
Instructions
  1. Sprinkle apple and plantain with generous cinnamon
  2. Cook apple and plantain in a small amount of coconut oil.
  3. Add a bit of water and vanilla to the hot pan.
  4. Sprinkle with a few tablespoons of coconut flour
  5. Turn off heat, cover, and let sit for several minutes.

A non-traditional chili filled with an abundance of flavor and textures.
Ingredients
  • 2 pounds of ground beef, browned
  • 2 large onions, diced
  • 2 large sweet potatoes, diced
  • Whatever fresh sweet and hot peppers are available
  • Chopped garlic or garlic powder
  • Chili powder
  • Salt and pepper
  • Ground red pepper
Instructions
  1. Brown ground beef, add onions and cook until mostly done.
  2. Add sweet potatoes, cook until mostly done.
  3. Try not to stir too often to keep the potatoes intact.
  4. Add chopped peppers or other veggies, add seasoning.
  5. Cook on medium-low until desired doneness.

Paleo Mashed Sweet Potatoes

Sweet and creamy. A great side dish that tastes like dessert.
Ingredients
  • 3 large sweet potatoes, peeled and roughly chopped
  • Half stick of Butter
  • Cinnamon
  • Nutmeg
Instructions
  1. Boil sweet potatoes until very soft, drain and return to pan.
  2. Add butter, cinnamon, and a small amount of nutmeg
  3. Mash everything until smooth.

 

Paleo Lasagne

Use with Paleo Italian Pasta Sauce

Layers of meat, veggies, sauce, and cheese, baked until golden and bubbly.
Ingredients
  • Paleo Italian Sauce
  • Eggplant, thinly sliced into large circles
  • Zucchini, thinly sliced into small circles
  • Ground meat (I used pork), browned and seasoned
  • Parmesan
  • Shredded Mozarella/Pizza Cheese
  • Salt
  • Pepper
  • Garlic powder
Instructions
  1. Layer from the bottom:
  2. Pasta sauce (thin layer)
  3. Eggplant, not overlapping
  4. Half of meat
  5. Pasta sauce
  6. Zucchini, not overlapping
  7. Lightly add pepper and garlic powder
  8. Parmesan (lightly)
  9. Mozzarella (lightly)
  10. Eggplant
  11. Remaining meat
  12. Pasta sauce
  13. Zucchini
  14. Llightly salt, pepper, and garlic powder
  15. Sauce
  16. Parmesan
  17. Mozzarella
  18. Cover, bake at 350 degrees for 45 minutes to an hour. Uncover until cheese is brown.

  1. In pan, fry sweet potato in coconut oil
  2. Add egg, cook throughly.
  3. Add salt and pepper to taste.

  • Sauce:
  • Tomatoes
  • Green pepper
  • Zucchini
  • Fresh basil
  • Fresh parsley
  • Fresh garlic
  • Olive oil
  • salt
  • pepper
Instructions
  1. Throw all ingredients into Kitchen Ninja and puree. Cook at medium-low heat to reduce and thicken.

 

Paleo Banana Bread/Muffins

Paleo Banana Muffins

Paleo banana muffins. Very good.
Ingredients
  • 4 bananas, (2½ cups mashed or 575 grams)(they can be yellow bananas)
  • 4 eggs
  • ½ cup almond butter (140 grams)(or coconut, sunflower seed, macadamia, etc)
  • 4 tablespoons grass-fed butter, melted (can substitute coconut oil)
  • ½ cup coconut flour (75 grams)(or almond flour, macadamia nut meal, etc)
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • pinch of sea salt
Instructions
  1. Preheat your oven to 350 degrees fahrenheit
  2. Combine your bananas, eggs, and nut butter, and grass-fed butter in a blendtec, blender, food processor, or mixing bowl and mix well (if using a mixing bowl you need a good hand-mixer)
  3. Once all of your ingredients are blended, add in your coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt and mix well
  4. Grease a 9×5 glass (see notes) loaf pan with a fat of your choice (I used grass-fed butter). If you use a metal pan it will probably bake in 35-40 minutes so start checking at 35 to ensure the middle stays moist
  5. Pour in your batter and spread it evenly throughout
  6. Place in your preheated oven and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean
  7. Remove from oven and flip your bread out onto a cooling rack
  8. Slice and serve
  9. * I make these as muffins, cook time is about 25 minutes.
