Low Carb Deep Dish Pizza

4 oz cream cheese
3 eggs
1/3 c cream
1/4 c grated Parmesan
1/2 t oregano
1/4 t garlic powder
2 c mixed Italian cheese
1/4 c pizza sauce
1 c mozzarella
desired pizza topping

Preheat oven to 375. beat together cream cheese and eggs until smooth. Add cream, parm cheese, and spices and mix again. Spreay oblong casserole dish with PAM. Sprinkle 2 cups Italian cheese into dish and pour egg mixture over it. Bake at 375 for about 20 minutes. Let stand for 5 minutes. Spread on pizza sauce, mozzarella cheese, and pile with your favorite toppings. Then sprinkle with more parmesan cheese. Return to over and bake until bubbly and browning. Allow to stand 10 minutes before cutting.

Scalloped Pineapple

Cream together:
1 stick butter
1 c sugar

Mix in:
2 eggs
20 oz can of crushed pineapple with juice
3 c bread cubes, packed

Bake 45 to 60 minutes at 350

Joyce's Sweet Potato Casserole with Praline Topping

Serves 12

5 pounds of sweet potatoes, cooked and peeled
3 eggs
2/3 c brown sugar
2/3 c melted butter
1/3 c cream
1 t vanilla
1 t nutmeg
1 t cinnamon

Praline topping:
1 c brown sugar
1/3 c flour
1 c chopped pecans
1/3 c butter, but into small pieces

Preheat oven to 350. Lightly grease a shallow 2-quart casserole. mash the cooked sweet potatoes. You should have about 6 cups.

Beat in eggs, brown sugar, melted butter, cream, vanilla, nutmeg, and cinnamon. Pour into the baking dish.

To make the praline topping, combine the brown sugar, flour, and chopped pecans in a bowl. Work in the butter until crumbly. Sprinkle on top of the sweet potatoes. Bake for about 50-60 minutes or until browned and bubbly.

Taco Casserole

Fry:
2# hamburger
2 pk taco seasoning
1 chopped onion

Add:
2-15 oz cans tomato sauce
1/2 c water
1 can refried beans

Layer mixture with 2 cups of taco chips and 2 cups cheddar cheese. Bake at 350 for 30 minutes.

Melinda's Breakfast Casserole

12 slices of bread
1/2 pound cheddar or colby cheese
2 c ham, cubed
10 eggs, beaten
2 1/2 c milk
1/2 t salt
1/2 t dry mustard
1 stick oleo, melted

Cube 8 slices of bread and place in the bottom of 9×13 pan. Cover with grated cheese and cubed ham. Mix together eggs, milk, salt, mustard and pour over bread/cheese/ham. Add last slices of bread, cubed. Pour melted margarine over all. Refrigerate over night. Bake uncovered for 1 hour at 350.

Serves 12.

Bev's Broccoli and Rice Casserole

1 box frozen chopped broccoli (or 1 head, chopped)
1 can cream of mushroom soup
1 cup cheese, cut up (or 1 small box Velveeta)
1 c cooked rice
1 soup can water

Cook rice, add water and soup. Add cheese and broccoli. Simmer on stove top until cheese and broccoli are mixed. bake about 30 minutes in 350 degree oven or until brown on top.

Chicken on Rice

mix together:
2 can cream of celery soup
2 can fulls of milk
2 envelopes onion soup mix

Add 1/2 cup raw rice to half of the mixture.

Place in pan, top with 4 chicken breasts. Pour rest of mixture over top.

Bake covered 1 hour. Uncover and bake 15 minutes.

Scalloped Corn (Corn Casserole)

1 can whole corn
1 can creamed corn
2 eggs
1 box jiffy corn bread mix
8 oz sour cream
1/2 c oil

Combine and bake 350 for 1 hour.
