Mud Pie

1 c granulated sugar
1/2 c margarine or butter, melted
1/3 c flour
1/3 c cocoa
1/4 t salt
1 t vanilla
2 eggs
1 c chopped nuts (optional)
1/4 c fudge sauce or fudge ice cream topping
1 c chilled whipping cream
2 T powdered sugar

Heat oven to 325. Grease a round 8″ pan.

Mix granulated sugar, butter, flour, cocoa, salt, vanilla, and eggs in a medium bowl. Stir in nuts and pour into pan.

Bake until edge appears dry and wooden pick inserted in center comes out clean (center will be moist), 35-37 minutes.

Immediately prick holes in pie with a wooden pick, then spread fudge sauce over top. Allow to cool completely.

Beat whipping cream and powdered sugar in a small chilled bowl on high speed until stiff; spread over fudge sauce. Drizzle with 2 to 3 tablespoons additional fudge ice cream topping, if desired. Store pie in refrigerator.

Makes 6 to 8 servings.

5 Minute Chocolate Mug Cake

4 T flour
4 T sugar
2 T cocoa
1 egg
3 T milk
3 T oil
3 T chocolate chips (optional)
small splash of vanilla
1 large microwave-safe mug

Add dry ingredients to mug and mix well. Add the egg and mix throughly. Pour in the milk and oil and mix well. Add the chocolate chips and vanilla and mix again.

Put your mug in the microwave and cook on high for 3 minutes. The cake might rise over the top of the mug but don’t be alarmed.

Allow to cool a little and tip it out into a plate, if desired.

EAT! This can serve 2 if you feel slightly more virtuous. And why is this the most dangerous cake in the world? Because now we are only 5 minutes away from chocolate cake at any time of the day or night!

Grandma Farrer's Texas Sheet Cake

Cream Together:
2 c flour (240 grams)
2 c sugar
1 t soda
1/2 t salt
1 t vanilla
1/2 c sour cream
2 eggs

Boil 1 cup margarine, 1 cup water, and 2T cocoa and add to cream.

While still hot, pour in 15x9x2 pan, greased and floured. Bake at 350 for 20 minutes.

Frosting:
1 stick oleo
4 T cocoa
1/2 c milk

Bring to boil and let cool slightly.
Add 1 t vanilla, 1 box powdered sugar (453 grams.) Spread on cake as soon as it comes from the oven.

Fantasy Fudge

3/4 c margarine
3 c sugar
2/3 c evaporated milk
12 oz semi-sweet chocolate chips
7 oz marshmallow cream
1 t vanilla

Microwave margarine in 4 quart bowl on high until melted. Add sugar and milk, mix 5 minutes or until boil (stir at 3 minutes). Microwave 3 minutes, stir. Microwave 2 1/2 minutes and add chips. Add remaining ingredients.

Makes 3 pounds.

Fool-Proof Chocolate Fudge

18 oz chocolate chips
14 oz Eagle-brand condensed milk
dash salt
1 1/2 t vanilla

Melt chips with milk, remove from heat. Stir in remaining ingredients. Pour into 8×8 pan.

Marshmallow Cream Fudge – Chocolate

3/4 c (1 1/2 sticks) margarine
3 c sugar
5 oz evaporated milk (2/3 cup)
12 oz chocolate chips
7 oz jar marshmallow cream
1 t vanilla

Lightly grease 9×9 or 13 x 9 pan. Melt butter, sugar, milk. Bring to full boil on medium heat, stirring constantly. Continue to boil 5 minutes. Remove from heat. Gradually stir in chips and remaining ingredients.

Bev's Chocolate Cake

1 box devil’s food cake mix
1 can cherry pie filling
3 eggs
1 tsp vanilla

Combine all (you can puree the cherries if you want) and bake in 9 x 13 pan according to box directions.

Goes great with fudge frosting.

1 box powdered sugar
1 stick butter
8 oz peanut butter
3 c rice krispies
12 oz semi sweet chocolate chips
1 stick wax
