Marshmallow Cream Fudge – Chocolate

3/4 c (1 1/2 sticks) margarine
3 c sugar
5 oz evaporated milk (2/3 cup)
12 oz chocolate chips
7 oz jar marshmallow cream
1 t vanilla

Lightly grease 9×9 or 13 x 9 pan. Melt butter, sugar, milk. Bring to full boil on medium heat, stirring constantly. Continue to boil 5 minutes. Remove from heat. Gradually stir in chips and remaining ingredients.

Apple Coffee Cake

2 c Bisquick
2/3 c milk or water
3 T sugar
1 egg
2 cooking apples (about 2 cups)
2 T chopped nuts

Streusel Topping:
2/3 c bisquick
2/3 c brown sugar
1 t cinnamon
1/2 t nutmeg
1/4 c butter

Glaze:
1/2 c powdered sugar
2-3 t milk
Mix baking mix, milk, sugar, and egg. Beat for 30 seconds. Spread 12 in pan. Arrange apple slices and half of the steusel topping. Top with remaining batter, streusel, and nuts. Bake 25 minutes and cool. Drizzle with glaze topping.

Pumpkin Bread

3 c sugar
1 c oil
4 eggs
2/3 c water
2 c pumpkin
1 1/2 t cinnamon
1 t nutmeg
3 1/3 c flour
2 t soda

Bake at 350 for 45 to 60 minutes in 3 greased bread pans or 1 bundt pan.

Baked Oatmeal

Serves 7.

1/2 c margarine, melted
2 eggs, beaten
2 t baking powder
1 c milk
1 c brown sugar
3 c oatmeal
1 t salt
1/2 t cinnamon

Mix margarine, brown sugar, and eggs.

Add rest of ingredients. Pour into a 1 1/2 quart casserole dish and bake at 350 for 40 to 60 minutes.

Double batch to make 9 x 13 pan.

Chocolate Eclair

2 packs instant vanilla pudding
3 c milk
1 medium tub Cool Whip
Graham crackers

Topping:
Melt:
2 squares semi-sweet baking chocolate
6 T butter
2 T white corn syrup
1 t vanilla
1 1/2 c powdered sugar
3 T milk

Terry's Ice Cream

Makes 1 gallon.

4 eggs
2 1/2 c sugar
5 c milk
4 c whipping cream
4 1/2 t vanilla
1/2 t salt

Beat eggs, add sugar gradually to eggs. Continue to beat until mixture is very stiff. Add remaining ingredients and mix throughly.

For Slippery Nipple flavor add:
1/2 c Butter Shots
1/2 c Irish Cream

Angie's Lasagne

1 box noodles
1 jar sauce
1 can tomato sauce
16 oz cream cheese
16 oz ricotta cheese
2 c mozzarella cheese
crushed red pepper, garlic, oregano, diced hot pepper rings

Mix ricotta, cream cheese, and spices. Layer noodles, mixture, mozzarella, and sauce in pan.

James' Chocolate Chip Cookies

2 c white sugar
2 c brown sugar
6 c flour
4 eggs
2 tsp vanilla
2 tsp baking soda
1 tsp salt
1 1/2 c butter
12 oz chocolate chips

Cream butter and sugars, add eggs, salt, soda, and vanilla. Add flour and chips. Sit in fridge at least 4 hours.

Bake at 350 for 8-12 minutes

Strawberry Pie

Mix with fork, pat in pan, and bake at 400 for 10 minutes:
1 c bisquik mix
1/2 stick melted butter
3 T boiling water

Filling:
1 c sugar
1 T corn starch
Boil, remove from heat, add:
1 small box strawberry jello
1 tsp butter.

Cool mixture and pour over berries arranged in pan.

Dirt Pudding

1 1/2 lbs crushed Oreos
1/2 stick butter
8 oz cream cheese
1 c powdered sugar
3 1/2 c milk
2 small boxes white chocolate pudding
12 oz Cool Whip

Cream together butter, cream cheese, and powdered sugar and set aside.

Mix milk and pudding together then add cool whip.

Layer cookie crumbs, creamed mixture, and pudding in bowl or beach pail ending with cookie crumbs on top.
